Wakakame (seaweed) Cucumber Salad is very simple to make, so refreshing and perfect side dish that goes with most of the Japanese dishes. Hope you enjoy this simple recipe of Wakame Cucumber Salad.
Ingredients

- 25g Dried Wakame Seaweed – https://amzn.to/3iU379u
- Ginger (small chunk) – Optional
[dressing]
- Dashi (1 teaspoon Hondashi powder in ¼ cup water) – https://amzn.to/2Q7RY8R
- 1/2 cup Rice Vinegar – https://amzn.to/3kTY4b0
- 1/4 cup Mirin – https://amzn.to/3geEKBz
- 1 And 1/2 tbsp Sugar – https://amzn.to/322OJoJ
- 1 tbsp Soy Sauce – https://amzn.to/2YfLSrl
Steps
- Add water in the dried Wakame seaweed and soak for a couple of minutes until softened. Set aside for now
- In a bowl, add water, hondashi powder, rice vinegar, mirin, sugar and soy sauce and mix well and set aside
- Slice the cucumber and put it in a bowl and massage with salt. Wait for a couple of minutes until liquid is out from the cucumber
- Slightly squeeze the cucumber to remove excess liquid and transfer in a different bowl
- Drain water from Wakame seaweed and combine with cucumber
- Add the dressing and give a good stir
- You may chill the Wakame Cucumber in the fridge before serving it
