Agedashi Eggplant or Ohitashi Eggplant (Agedashi Nasu / Nasu no Ohitashi) is a very popular appetizer in Japanese household dining. Traditionally, it deeps fry in the oil. Ingredients
Serves 3 – 4
- 2 pcs Long Eggplant – https://amzn.to/3ngNUow
- 150 ml water
- 2 tbsp Soy Sauce – https://amzn.to/3A3GSa4
- 2 tbsp Mirin – https://amzn.to/2X08pe1
- 1/2 tbsp Sugar – https://amzn.to/3z32Zw2
- 1/2 tsp Hondashi powder – https://amzn.to/2VAtgEw
Steps
- Prepare a broth/sauce. In a pan, add water, soy sauce, mirin, sugar and hondashi powder
- Turn on the heat and bring it to a boil.
- Once boiling, turn off the heat and set aside
- Cut the eggplant and put some incisions
- Spray the eggplants with cooking oil
- Place the eggplants in the Air Fryer basket skin side up
- Set Air Fryer temp to 350F and cook for 10 minutes
- After 10 minutes, open the Air Fryer, flip the eggplants
- And cook for an additional 3 to 4 minutes
- Transfer the eggplants into a pan with the sauce
- Turn on the heat and simmer for 1 to 2 minutes
- Turn off the heat
- Serve it!
