Japchae is a sweet and savory dish of stir-fried glass noodles and vegetables that is popular in Korean cuisine. Japchae is typically prepared with dangmyeon, a type of cellophane noodles made from sweet potato starch; the noodles are topped with assorted vegetables, meat, and mushrooms, and seasoned with soy sauce and sesame oil. I hope you guys enjoy my version of Japchae!
Ingredients

- Pepper (dash)
[beef marinate]
- 1 lb Beef Meat (thin sliced)

[noodles]
- 340g Sweet Potato Starch Noodles – https://amzn.to/2VM80Z2
Steps
[sauce]
- Mix all the sauce ingredients listed above
- Set aside
[beef maninate]
- Put dried Shiitake mushrooms in warm water to soften
- Slice the shiitake mushrooms into strips
- In a bowl, add beef meat, soy sauce, brown sugar, mirin, sesame oil, garlic (minced), a dash of pepper
- Add the sliced shiitake mushrooms and combine and set aside
[toppings]
- Boil water, add spinach and blanch (remove from the boiling water once the color gets darker and put in the cold water right away to shack it)
- Squeeze the spinach to extract the water and set it aside
- Beat eggs (salt added) and cook
- Slice the eggs into strips and set aside
- Peel the carrot and slice into strips
- Saute with sesame oil and set aside
- Slice the Green Bell Pepper into strips
- Saute with sesame oil and set aside
- Slice the White mushrooms into strips
- Saute and set aside
- Cook the beef (with shiitake mushrooms) and set aside
[noodles]
- Boil water
- Add the Sweet Potato Starch Noodles and cook for 6 minutes or follow the instructions on the package for the cooking time
- Remove from the boiling water and drain
- Add the sauce mixture and toss
[assembly]
- Add the noodles into toppings
- Mix all
- Serve it!
