How to make Japchae (Korean Glass Noodle Stir Fry) Recipe

Japchae is a sweet and savory dish of stir-fried glass noodles and vegetables that is popular in Korean cuisine. Japchae is typically prepared with dangmyeon, a type of cellophane noodles made from sweet potato starch; the noodles are topped with assorted vegetables, meat, and mushrooms, and seasoned with soy sauce and sesame oil. I hope you guys enjoy my version of Japchae!



Ingredients

Steps

[sauce]

  1. Mix all the sauce ingredients listed above
  2. Set aside

[beef maninate]

  1. Put dried Shiitake mushrooms in warm water to soften
  2. Slice the shiitake mushrooms into strips
  3. In a bowl, add beef meat, soy sauce, brown sugar, mirin, sesame oil, garlic (minced), a dash of pepper
  4. Add the sliced shiitake mushrooms and combine and set aside

  1. Boil water, add spinach and blanch (remove from the boiling water once the color gets darker and put in the cold water right away to shack it)
  2. Squeeze the spinach to extract the water and set it aside
  3. Beat eggs (salt added) and cook
  4. Slice the eggs into strips and set aside
  5. Peel the carrot and slice into strips
  6. Saute with sesame oil and set aside
  7. Slice the Green Bell Pepper into strips
  8. Saute with sesame oil and set aside
  9. Slice the White mushrooms into strips
  10. Saute and set aside
  11. Cook the beef (with shiitake mushrooms) and set aside

[noodles]

  1. Boil water
  2. Add the Sweet Potato Starch Noodles and cook for 6 minutes or follow the instructions on the package for the cooking time
  3. Remove from the boiling water and drain
  4. Add the sauce mixture and toss

  1. Add the noodles into toppings
  2. Mix all
  3. Serve it!
