Instant Pot Duo Plus 9-in-1 Electric Pressure Cooker
Ingredients
- 1 cup Sweet Rice (rinsed) – https://amzn.to/32srtSv
- 1 can (400ml) Coconut Milk – https://amzn.to/3c1bP3q
- 1 can (354ml) Evaporated Milk – https://amzn.to/3iwLGw2
- 1 cup Ube Jam (Ube Halaya) – https://youtu.be/p8tNkqXhBuM
- Salt (pinch) – https://amzn.to/3iB9r68
- 1/4 cup Sugar (to taste) – https://amzn.to/3hvCoPI
- 2 tsp Ube Flavoring – https://amzn.to/33vDxBE
- 3 cups Water
Note: With 3 cups water, it will reach a 4-cup level in the Instant Pot
Steps
- Add the rinsed sweet rice in the pot
- Add 1 can of Coconut Milk
- Add water and pinch of salt
- Put the lid on and close it. Set to Sealing position
- Set to Porridge and set the timer for 15 minutes
- Once the timer is done, keep it warm for additional 30 mins (for slow release)
- Press Cancel, set to Venting position (make sure Floating valve is down) then open the lid
- Press Saute and adjust to Normal heat
- Stir and make sure to scrape the bottom
- Add half of the can of Evaporated Milk and mix well
- Add Ube flavoring
- Mix well until incorporated
- Add the rest of Evaporated Milk
- Add additional water if it is too thick. (added 1 more cup of water in my case)
- Add Sugar (to taste)
- Give one last stir and serve with Ube Jam and Cheese on top
