How to Make Bibingka Recipe Using Air Fryer


About:  

Bibingka commonly refers to a type of baked rice cake from the Philippines that is traditionally cooked in a terracotta oven lined with banana leaves and is usually eaten for breakfast or as merienda (mid-afternoon snack) especially during the Christmas season.

In this recipe, I used Air Fryer where you can easily make a small serving of bibingka. If you are craving for a bibingka and you want to quickly satisfy your cravings, try this recipe. You can taste the authentic bibingka in a quicker way.

Ingredients

Serves 4

Steps

[dry ingredients]

  1. Mix all the dry ingredients and set it aside

[wet ingredients]

  1. In a bowl, add eggs and sugar then mix
  1. Add coconut milk
  2. Add melted butter
  3. Continue to mix

  1. Once wet ingredients are well mixed, add the dry ingredients mixture little by little while mixing.

  1. Prepare a cake pan (5 x 2 in)
  2. Place banana leaf in the cake pan
  3. Pour in the bibingka batter
  4. Cover with foil
  5. Place in the Air Fryer basket
  6. Set temp to 300F and cook for 10 minutes
  7. Remove the foil
  8. Add some salted egg, cheese
  9. Cook for another 10 – 15 minutes at 300F
  10. Check using toothpick test to make sure inside is cook. If not, cook for additional minutes
  11. Finish up with some more cheese and desiccated coconut on top
  12. Serve it!
