How to Make Biko (Filipino Sweet Sticky Rice) Recipe


About 

Biko is a sweet rice cake from the Philippines. It is made of coconut milk, brown sugar, and glutinous rice. It is usually topped with latik (either or both the coconut curds or the syrupy caramel-like variant). It is a type of kalamay dish and is prepared similarly, except the rice grains are not ground into a paste.

Steps

  1. Add coconut cream, brown sugar and salt in a pan
  2. Turn on the heat
  3. Mix the ingredients until it gets thicken
  4. Turn off the heat and set it aside

[Main]

  1. Cook Sweet Rice
  2. Prepare a pan, add coconut milk, coconut cream, sugar, salt
  3. Mix all the ingredients
  4. Turn on the heat
  5. Keep stirring
  6. After 5 minutes of stirring, simmer to reduce the liquid
  7. Add sweet rice
  8. Mix well together until you see the oil is coming out from the rice mixture (You will notice that the rice mixture is shiny due to the oil and see the spots on the pan) 
  9. Spread butter in the tray and transfer the rice in the tray for baking
  10. Preheat the oven to 375F
  11. Spread the topping (latik) on top of rice
  12. Bake for 15 minutes
  13. After baking is done, switch to Broil and broil it for 5 minutes
  14. Cool it down and serve it!
