  1. Mash the bananas add the lemon extract
  2. Put together the butter, yogurt, sugar, and eggs then combine the vanilla, mix all together.
  3. Combine the flour, cinnamon, baking powder, baking soda, and salt and mix together.
  4. Mix the banana with the wet ingredients and gradually add the dry ingredients.
    Note: Very important do not over mix the batter!
  5. Pour batter into prepared loaf pan
  6. Preheat oven to 350F
  7. Bake for 1 hour.  To test if it’s done, insert a toothpick in the center and if it comes out wet then let it go 10 minutes more.
  8. When ready, let it cool for about 5 minutes.
