How to make Homemade Ube Halaya (Filipino Purple Yam Jam) Recipe

Ube halaya or halayang ube (variant spellings halea, haleya; from the Spanish jalea, “jam”) is a Philippine dessert made from boiled and mashed purple yam. Ube halaya is the main base in ube/purple yam flavored-pastries and ice cream. It can also be incorporated in other desserts such as halo-halo or Ube Ice Cream. It is also commonly anglicized as ube jam, or called by its original native name, nilupak na ube. You can use this to make the Ube Cheese Pandesal as well!

In this recipe, I used Instant Pot to steam the purple yam and Vitamix Blender to mash and blend the evaporated milk altogether.

Ingredients


Steps

  1. Set the steamer in the Instant Pot
  2. Add a cup of water
  3. Place the Purple Yams in the pot
  4. Close the lid and set to Manual mode and cook for 15 minutes
  5. Cool down for about 10-15 minutes after the yams are cooked
  6. Remove yams from the pot and peel the skin off
  7. Cut in smaller chunks
  8. Put the purple yams in the blender and add evaporated milk
  9. Use Smoothie mode and use pulse to mash the yams little by little
  10. Blend until smooth
  11. Prepare a pan, add butter
  12. Add Condensed Milk and Nestle Cream and mix well
  13. Add the mashed purple yams
  14. Set to mid to low heat but adjust the heat accordingly, if you see the mixture is too bubbly, lower the heat and keep stirring for an hour or until it thickens

Note: Make sure to continue stirring to avoid burning the bottom part

  1. Add sugar and salt and continue stirring
  2. Once the yam mixture thickens add vanilla extract
  3. Transfer the yam in greased tray and let it cool down 

You can eat this Ube Halaya as is or use it as a filling for Ube Pandesal or as an ingredients for Ube Ice Cream.
