How to make Baked Sushi in Muffin Style Recipe

Baked Sushi or Sushi Bake is a non-traditional Sushi recipe trending in the Philippines. Typically it is cooked(baked) in a tray or a casserole. In this recipe, we will be making in a muffin style which makes a beautiful look and we will be making two toppings, Spicy Ahi Poke and the popular Salmon Crab Stick topping. Hope you enjoy! 🙂

Ingredients

[for Spicy Ahi Poke]

Steps

[for Spicy Ahi Poke topping]

  1. Cut the tuna (maguro – sashimi grade) into dice
  2. Cut onion into dice
  3. Mix all ingredients for Spicy Ahi Poke
  4. Set aside

[for Salmon Baking]

  1. Add Sake, Salt and Pepper to Salmon and marinate for a couple of minutes
  2. Bake the salmon at 375F for 8 to 9 minutes (or until salmon is cooked)

[for Salmon – Crab Stick topping]

  1. Unwrap crab sticks and shred
  2. Shred baked salmon
  3. In a bowl, combine shredded crab sticks and salmon and add all the ingredients for salmon crab stick topping and mix well
  4. Set aside

[for Sushi Rice]

  1. With 4 cups rice, add 1/2 cup sushi vinegar (but add some more based on your taste preferences)
  2. Gently combine the sushi vinegar with rice. (Do not mash the rice)

[assemble – spicy ahi poke]

  1. Use a scooper to shape the sushi rice
  2. Add some furikake on top of the rice
  3. Use smaller scooper and add Spicy Ahi Poke on top of the rice

[assemble – salmon crab stick]

  1. Use a scooper to shape the sushi rice
  2. Add some furikake on top of the rice
  3. Use smaller scooper and add salmon crab stick on top of the rice
  4. Broil it for 6 – 7 minutes
